"Low-Cal Vinaigrette"


4 Servings:
1 garlic clove, crushed
5 tablespoons stock or bouillon
1 tablespoons vegetable oil
1 tablespoons lemon juice
1 tablespoons balsamic or other
vinegar
1/2 tablespoon chives
1/2 teaspoon chervil
1/8 teaspoon* Tabasco sauce,
or less, to taste
1/4 teaspoon* salt
1/4 teaspoon* black pepper
Combine first seven ingredients and set aside to marinate at least 2 hours. Add Tabasco, salt, and pepper to taste. Stir briskly to mix before serving. Suggestions: Great over salads, as a dip for crudites, or as a dressing for cooked vegetables.
