Christmas Apple Cake


2 cups sugar

½ cup vegetable oil

1 cup applesauce

2 "egg replacers"

3 cups flour

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons vanilla

1 teaspoon cinnamon

3 Granny Smith apples: peeled, cored, and cut into chunks

1 ½ cups pecans*, slightly toasted

Combine first nine ingredients in order listed, mixing thoroughly. Fold in the apples and nuts. Bake at 350 degrees for 1-1/4 hours in a tube pan or until a toothpick inserted in the middle comes out clean. Top will be golden brown. Allow to rest for three days.

*Tip: To further lower fat, use 1 cup toasted almonds and ½ cup toasted pecans.
